Gabrielle (Gabby) Glime, MS, CLC

Hi! I’m Gabby and I am one of the Clinical Research Professionals in the Tang Lab. I am the primary study coordinator for the Blueberry Study, which is looking at blueberries as one of the first solid foods for infants weaning off of breastmilk, but I dabble in all of our ongoing studies. While I am originally from Oklahoma, I have spent over half of my life in Colorado and happily call it home. I received my Bachelor's and Master's in Biology from the University of Colorado Boulder and have since gone on to complete my Childhood Development Associate certification, become a Certified Lactation Consultant, and complete a certificate in Genomics and Personalized Medicine. When I’m not working, I like to spend my time outdoors, primarily running, but also hiking, cycling, and rock climbing.

Fun facts about Gabby:

  • She skateboarded throughout middle school and into the beginning of high school
  • Her name starts with a “G” because her older brother was obsessed with the Grinch at the time of her birth, but “Baby Grinch” just didn’t quite feel right (though if you reorganize the letters from “Baby G, “ it spells “Gabby”)
  • She would MUCH rather be too hot than too cold


Mikayla Hernandez

Hi! My name is Mikayla Hernandez, I am a study coordinator for the MINT study, looking at the effects of early complementary feeding on infant growth and gut health. I grew up in Centennial Colorado, about twenty minutes outside of Denver. I completed my Bachelor of Science at Black Hills State University in Spearfish, SD, where I played D2 colligate soccer and studied exercise science with an emphasis in physical therapy and nutrition. 

In my free time, I really enjoy practicing Brazilian jiujitsu, weightlifting, and physically challenging activities. My hobbies include calligraphy, journaling, and trying new coffee shops throughout the metro area!"


 Kinzie Matzeller, MS, RDN, CLC

Kinzie Matzeller

Hi! My name is Kinzie Matzeller, I am the primary coordinator for the MINT study, looking at the effects of early complementary feeding on infant growth and gut health. I am originally from a small town in northern Wisconsin called Frederic and received my Bachelor of Science degree in Dietetics from Iowa State University. I completed my dietetic internship here on the Anschutz Medical Campus at Children’s Hospital Colorado before accepting this position in the research lab. Following my internship, I passed the Registered Dietitian exam and Certified Lactation Consultant exam before completing my Master of Science in Clinical Nutrition from University of Wisconsin - Madison.

In my free time, I enjoy heading up to the mountains to go camping and hiking. We also travel to the surrounding National Parks when we have long weekends. I love to cook, especially African and Asian cuisines, as well as hobbies like embroidery and knitting!


Claudia Schaeffer, BS

Hi! My name is Claudia Schaefer. I graduated from the University of Colorado Boulder in May 2022 with a Bachelor’s in Biology and a Public Health Certificate. My favorite classes in college were epidemiology, nutrition, and public health, so when I was offered a Professional Research Assistant position in the Tang Lab, I was ecstatic! I began my career at CU Anschutz assisting my fellow PRAs on infant studies. Currently, most of my time is spent conducting the Mini MED Clinical Trial. This study plans to learn more about how consuming a diet with foods typical to a Mediterranean Diet such as whole grains, fruits and vegetables affects overall health. Results from this study will potentially inform dietary recommendations to reduce chronic diseases.

In my free time, I enjoy spending time outside, yoga, cooking, and playing with my dog, Bowie. I am originally from Cincinnati, Ohio, so I am always rooting for the Bengals.
